It is cured for at least 8 months to give it its strong flavours and aroma of ripe fruits with slight animal notes and spiciness. The cheese is called “drunken” because it is soaked in a great aging Amarone wine. Amarone wine is one of the most valuable Italian red wines distinguished by the intense scent of cherry, walnut and spices, which gives it its robust taste."
