Pecorino Toscano
Pecorino toscano, which comes from the Tuscan regions of Grosseto and Siena, is softer, creamier, and grassier than pecorino romano. It is available in semi-aged and mature varieties, however it is commonly offered fresh after only 20 days of maturation. Younger pecorino toscano is a favorite table cheese; the sweetness of honey, fig, or pear combines well with its subtle nuttiness.
